Bread and Bars

Lately I've been trying to find filling snacks for my kids' growing appetites. Here are two of our favorite recipes that I made this week that are healthy and filling and easy to make (thank you Ms. Kim):



Molasses Bread (Tasha Tudor's recipe):

2 c. oats
4 tsp. salt
1 c. molasses
1/4 c. butter

Throw together in large bowl. Then pour 4 c. boiling water over it. Let soak for 1 hr.

In 1 c. lukewarm water, stir in 4 1/2 tsp. of yeast in (then I sprinkle a little sugar on it and cover with saran wrap until nice and foamy- takes a couple of minutes).

Pour yeast mixture in big bowl mixture and mix in 9-10 cups of flour well. Knead for 8 min. Smooth into a big ball. Put a little oil in bowl and coat the dough on both sides and plop it back in the bowl. Take a clean dishtowel, put under hot tap water, wring out, put over bowl to add warmth and moisture. Let sit for 1 hour.

I cut my big ball into 4 large loaves. Put them in the greased bread pans. Let them sit an hour with the dishtowel trick over them again.


Preheat oven to 350. Bake for 45-60 min, depending on your pans you use.


This bread is delicious! Very moist inside and I love molasses so it was love at first bite.



Homemade Granola Bars


1 heaping cup of peanut butter
4 TB. oil
3/4 c. sugar
4 eggs
1 tsp. salt
4 tsp. vanilla


Mix all together well then add:

5 c. oatmeal
some chocolate chips or dried fruit or nuts


Bake in a 9x13 inch pan at 350 for 12 minutes. YUM!

Oh... My Heart...Part 2

Today my heart is heavy because it seems all around me marriages of friends and well esteemed people are crumbling. Regardless of the reasons, divorce is often so painful for more than just the two people involved.


I am reminded to pray for my own marriage and to not take it for granted. Marriage is something to protect, build and work on continually.




Oh...my heart...Part 1

I've had that sick feeling for the last couple of days. The kind when the heart hurts. Yesterday I was reading an article that stated:

Since 1973 when the Supreme Court legalized abortion, we have killed more than the entire population of Canada.

That's staggering to me. Perhaps it hits even closer to home because I have children of my own and I even had a baby die by natural causes. When Samantha died, I've had people question why I didn't have an abortion knowing her fatal outcome as a Trisomy 18 baby. Aside from knowing it would have been wrong to kill her in my womb, I cannot fathom not having the sweet memories of her. We would have missed her sweet sounds and smiles and we would never gotten to know her.

I look forward to help with this in some way. To the mom who's already experienced abortion, there is sweet forgiveness. To the mom considering an abortion, I pray that you will seek help and that we Christians will flock to them.

Winter Wonderland

Tuesday we were hit with an ice/snow storm. Because of our curvy, hilly country backroads, our road was one of the last to be plowed.




The trees were so pretty even though they have such a heavy burden to bear with all of the ice. All of the blue hues are delightful and the colors seem more brilliant.



Friday I decided to try to get out for some groceries. Driving down our driveway, I was mesmerized by the glittering beauty. I had to lean out the window and take a few pictures...

Oops. Slid off the driveway a little and couldn't get out. 5 hours later a tow truck came and pulled me out. Yes, out of my own driveway. So you can imagine the teasing I've had from my other half this weekend...
